A recent study has shown that sweet potato when baked is much richer than sweet potato that is fried. Fried sweet potato loses about 75 percent of vitamins A and C; worst still, fried sweet potato has more calories from the fat used in frying. Also, the fried sweet potato has less fibre than baked potato.
These were disclosed by a nutritionist, Sonya Angelone, spokesperson for the Academy of Nutrition and Dietetics, USA.
Consumers are therefore advised to go for baked potatoes.
